Yotam Ottolenghi’s Plenty Cookbook
We love that this book is organised by vegetable. For us, a butternut squash can feed us four times. Therefore, having the recipes all organised by vegetable helps with meal planning and reducing waste.
More importantly though is that this book matches our view of ‘vegetarian’. Vegetarian so many times is interpreted as “without meat” so you end up with some combination of bread and cheese. However, our view is that vegetarian food should show off the versatility and excitement of vegetables. Vegetables at the core of the dish and that is what Plenty provides. Definitely a cookbook we use regularly.
