BBQ Vegetable Couscous Salad is one of my favourite BBQ buffet and pack lunches. It is hearty yet light and lemony. I prefer to BBQ the vegetables but you can also roast them in the oven at 180C (fan oven) until soft and a bit charred. I also have an autumn variant that uses butternut squash when it is too cold and rainy to have the BBQ on.
