BBQ Vegetable Couscous Salad

BBQ Vegetable Couscous Salad is one of my favourite BBQ buffet and pack lunches.  It is hearty yet light and lemony. I prefer to BBQ the vegetables but you can also roast them in the oven at 180C (fan oven) until soft and a bit charred. I also have an autumn variant that uses butternut squash when it is too cold and rainy to have the BBQ on.

The picture above includes our BBQ Yogurt Marinated Chicken layered between the couscous and the vegetables.  They go great together! Below BBQ Vegetable Couscous Salad with Halloumi and our Mint Yogurt Sauce.

Swap your vegetables for whatever you prefer or have around. In this version, we used asparagus and sweet potato. Make it yours!

Instructions
Couscous Base
  1. Add couscous to large mixing bowl.
  2. Pour over boiling water.
  3. Cover with plastic wrap and set aside.
Vegetables
  1. Mix together the lemon and olive oil in large mixing bowl with a small whisk.
  2. Slice vegetables as appropriate for BBQ or roasting (I like bigger pieces if using the BBQ).
  3. Marinate vegetables for 30 to 90 minutes.
  4. Roast / BBQ until soft and a bit charred.
Pan Fry Halloumi
  1. Add the olive oil to a hot pan and fry the Halloumi, turning once, to brown the cheese.
Combine & Serve
  1. Fluff the couscous and mix in juice of 1 lemon and coriander.
  2. Divide couscous among the serving plates.
  3. Top with the BBQ Vegetables and Halloumi.
  4. Serve with minted yogurt sauce on the side.
