American Cinnamon Apple Cake

Our dairy-free, Apple Cake is perfect for an autumn dessert or afternoon tea. The sweet, sharp cake is perfect for warm autumn days and chilly nights.

Ingredients

Cake

  • 300 grams sugar , caster or granulated
  • 2 large eggs
  • 250 ml vegetable oil
  • 375 grams plain flour
  • 1 teaspoon bicarbonate of soda
  • 2 teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 400 grams apples , Granny Smith or other firm, tart variety
  • 100 grams walnuts , finely chopped

  • Apple Peeler / Corer

Instructions

  • In the stand mixer, beat the eggs and oil until foaming.
  • Add sugar, flour, cinnamon, bicarb, vanilla extract and salt.
  • Fold in diced apples and walnuts (if using)
  • Pour into prepared 9 x 13 inch (20 x 30 cm) cake tin.
  • Bake at 180C (fan) for 30 to 40 minutes - until skewer comes out clean.
  • Eat as is or let cake cool and cover with Cream Cheese Frosting.
