Ingredients

Pancake Batter - Dry

  • 75 grams plain flour
  • 75 grams whole wheat flour
  • 15 grams caster sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger

Pancake Batter - Wet

  • 100 grams Greek Yogurt
  • 50 ml milk
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 tablespoon vegetable oil

Apples

  • 4 small apples peeled, cored, diced small

To Serve

  • maple syrup to taste

Instructions

  • In a large bowl, mix all of the dry ingredients.

  • In a small bowl, mix the wet ingredients.
  • Heat a non-stick pan or griddle.
  • Prepare the pan with non-stick cooking spray or a small drop of vegetable oil.
  • Make a well in the dry ingredients and pour in the wet ingredients.
  • Mix until just combined - the batter will be lumpy.
  • Fold in the diced apples.

  • Cook each pancake on a hot griddle turning once when the edges brown the top of the pancake is full of bubbles.
  • Serve with butter and maple syrup.
  • Makes four 20 cm pancakes.
