Cranberry Nut Swirls
If you can’t find dried cranberries, you can make these with mincemeat as an alternative to mince pies.

  1. In a large bowl (I use a Kitchenaid mixer), cream together butter, sugar, egg and vanilla until fluffy.
  2. Combine flour, baking powder and salt and add to the mixture.
  3. Refrigerate the dough for at least 1 hour.
  4. In a small bowl, combine cranberries, walnuts and orange zest.
  5. In a separate small bowl, combine brown sugar and milk.
  6. Roll out the dough on a floured surface into a square.
  7. Spread the brown sugar and milk mixture over the dough.
  8. Sprinkle the cranberry and nut mixture over the dough.
  9. Roll dough tightly (like a swiss roll). Wrap in baking parchment and chill overnight.
  10. Slice roll into 1/4 inch slices and bake at 170 C until edges are light brown.
