Courgette & Spinach Soup

Prepare the vegetables in bulk in advance and store in the freezer.  Then to make Courgette & Spinach soup, just pull a bag from vegetables, dump it in a pot with a stock cube and you’ve got a healthy vegetable soup for dinner in under 30 minutes. Plus leftovers for lunch the next day!

Prepare the vegetables in bulk (especially when courgettes are in season) and store in freezer bags. Just dump the frozen vegetables into a soup pot to make a healthy, summery soup all year long.

Instructions
  1. In a large non-stick pot, add olive oil and heat to medium.
  2. Dump in all of the vegetables, cover until cooked through.
  3. Turn up heat to medium-high and stir vegetables until they gain some colour.
  4. Add in just enough water to cover the vegetables (about 500 ml) and the stock cubes.
  5. Bring to simmer.
  6. Let simmer until vegetables are cooked through.
  7. Serve as is. Alternatively, if you like a smooth soup, blend part or all of the soup with a stick blender.
