Cajun Spice Mix

I cannot count the number of times we had blackened catfish in America. We can’t really get good catfish in the UK but this spice mix works wonders with pollack, tilapia, cod and salmon. See our Blackened Salmon recipe for our favourite use of cajun spice. I’ve even used this on chicken but make sure you don’t burn the spice.  Burnt isn’t the same as blackened.
