Instructions
  1. Make the quinoa to package instructions
  2. Mix together the ingredients for the dressing in a small bowl and set aside
  3. Drain and rinse the beans. Tip into a medium bowl.
  4. Add pepper, spring onions and coriander.
  5. Add the quinoa to the black beans. Add dressing and stir to combine.
  6. Place spinach leaves in serving container and top with the bean and quinoa mixture.
Recipe Notes

This tastes best when the beans and quinoa have marinated in the dressing overnight.
